Windows 10 "Date modified" is changing in Windows explorer despite no changes being made to files

Hello, I've seen several other folks post about this but it seems to be a persistent issue. When I open a file to read it, but do not make any changes (no typing, no saving; I simply close the file again) the "date modified" column in windows explorer is automatically updated to today's date. I've tried adding the "date created" column in the folder window as well, and that date is also changing to today's date. This makes things difficult when I'm looking for a specific version of a file (I'm a writer and often save multiple drafts of things I'm working on). This is happening with Office fi
