Windows 11 Date Taken field is cleared when editing with Windows Photo in Windows 11

I recently moved to a new computer that has Windows 11. After downloading pictures from my camera, I look at them in a File Explorer View->Details that I've added the "Date Taken" field. I double click on the photo to bring it up Microsoft photos. I edit the photo (control-e) and crop it, do auto-enhance and change the light on the picture. Sometimes (not always) after I SAVE the updated picture, the "Date Taken" field has been cleared. This has happened to me multiple times although sometimes I can edit my picture and the "Date Taken" field is not cleared. I have been doing this for
