Windows 11 How do I get my printer to continue to print in color when I change the printing properties from the default settings??

I have an hp3830 anytime I click on properties or advanced to change the print quality from normal to best; my printer stops printing in color. It also does this if I change the paper type as well. In order for it to start printing in color again; I have to uninstall and reinstall the printer. I am using windows 11 but it was doing this when I was using windows 10 as well. How do I get my printer to continue to print in color when I change the printing properties from the default settings??
