Windows 11 How do I log into second non-Microsoft account without email on Windows 11?

I have a new laptop for work that I linked to my work Microsoft account. For a new software, i want to create a second account, not linked to Microsoft. I made the account but when I try to log in, it asks for my email address, which the new account does not have. I can't change it to ask for username.I have seen Youtube videos where it has the accounts listed in the start menu but that is not here.Where do I go from here?
