Windows 11 How do I stop windows from deleting my files when it restarts? PLEASE HELP!

Whenever I install something it stays but when I restart everything gets removed and I tried this so many times it still kept deleting it please help, it also says sign out to get all of your data back but it doesn't do anything, please provide a video or a way for me to understand how to not delete any files when I restart.
