Windows 11 How to get my Documents folder back, without Onedrive

I don't want Onedrive - it took over my laptop and I just want to save documents on my laptop in my Documents or Pictures folders. So I uninstalled Onedrive, and now my Documents folder has disappeared. I can still access my files but I have to search for them and it's slowing down my work. Any ideas how I can reinstate a simple, straightforward, Documents and Pictures folder like I had before Onedrive got involved?
