Windows 10 How to intall latest version of windows in offline to solve OS issue?

I just re-installed windows and using it with perfect offline,Suddenly, I’ve encountered a serious issue, but I soon figured out that I’ve already been through that issue and the cause is the problem of version which is released in middle of this May.So I’d like to install the latest version of windows update, or roll back to previous version,Microsoft Update Catalog there are too many kinds of updates (security update, critical updates… etc) So I’m confusing, Should I have to install them all, or just install one integrated updates
