Windows 11 One Drive DELETED my Documents folder? How do I get it Back?

My system did an update today, and I must have clicked the wrong button which allowed One Drive to start auto-backing up all my files.Problem is, now they don't exist on my computer!My shortcuts are all broken.My Documents folder is literally empty.What happened to all my files? And how do I get them back?Luckily I have a manual backup on an external harddrive from not long ago.How do I:1. Uninstall one-drive so it doesn't try to back up my files2. Access the files that used to be in my Documents folder?
