Windows 11 Unwanted accents/diacritics with Ink-to-Text

I'm using Ink-to-Text in MS Word on an HP Spectre x360. Every time I write "Jesus" (which is a lot, because I'm in grad school for theology), it inserts "Jesús." This is incredibly annoying to fix, and it's not easy to correct that with ink-to-text. I've tried adding "Jesus" to my custom dictionary, changing my keyboard and proofing languages, etc. Nothing works.How do I get this to stop?
