Windows 10 Using speech recognition in windows 10 to dictate text in Word

I want to be able to use speech to write in Word. I have been trying to do this and there seems to be some missing detail. for instance when I dictate, the words appear, but if I pause and begin speaking again it overwrites what was already in the document and does not append the new speech that was already there. I'm sure there is a way to prevent this, but I haven't found anything useful so far. Is there a place where more information is documented?
