Windows 11 What is MsMpEng.exe? When Task Manager isn't open my computer sometimes doesn't run as well as it would when Task Manager is open.

Literally every time I open Task Manager, I see this MsMpEng.exe (along with GPU Process) at the top of the list. After a second it disappears and my CPU falls from like 80% to 10%. I'm not that great with computers so what is happening here?
