Windows 10 What is the difference between "Windows 10 S (pro)" and just not using anything but the windows store?

I do not need anything but what I can get from the windows store on my old original edition surface pro. What are the real advantages of switching to "Windows 10 S?" It is supposed to be more streamlined does that mean certain services that I need for compatibility won't be available so my system will boot faster and take up less memory? If so which services will I no longer have in Secure mode that I would on Normal mode. Is the only difference that you can only install from the windows store? I would like a line item audit of what is different in the process tree between the two versions, or a resource where I can get that. Thanks in advance for your interest in my question. Search the web for answers to this everywhere, but can find anything.
