Windows 11 Why on earth does everything delete?

I spent about half the week working on downloading several apps on my computer, only for all of them to get randomly deleted by an update I wasn't aware of last night. None of the apps are in my downloads folder, the setting that auto-deletes for storage was turned off automatically. All the apps took ages to download because the download speed was so ungodly slow after my computer downloaded Windows 11 without my consent at some point.
