Windows 11 Windows 11 default apps keep getting reset

In Windows 11 I have various file associations set to different default apps than the original - image files are set to Irfanview, video and audio files to VLC, for example. However, I find that these default apps get reset randomly - videos to Movies, images to Paint 3D except jpgs which get reset to WhatsApp, and audio to something else not of my choosing.I know how to reset all these but I don't want to have to, I want Windows to just leave the file associations how they are. Has anyone else encountered this, and found a solution?
