Windows 11 Windows 11 - How do I extend to a second monitor and then share the second screen on a projector?

I have a laptop with windows 11. I am trying to extend my screen onto a second monitor and duplicate that monitor to a projection screen (3 screens essentially). I have an HDMI converter to Serial port and a serial splitter to go between the second monitor and the projector. When I first turn the computer on, the screen is extended between the laptop and the projector (even with the monitor plugged in). If I unplug the projector screen and unplug/replug the HDMI in the computer, it extends to the monitor. I can then plug the projector back in and the 2nd monitor is displayed on the projector s
